🔺氧氣—咖啡在烘焙後會釋放二氧化碳。 如果你把咖啡放在拉鍊袋裡,不讓氧氣進入,袋子可能會爆裂。 但是,讓袋子開啟或讓氧氣一直進入袋子,味道會變得更糟。 合適的咖啡容器應該有一個釋放二氧化碳的閥門(單向排氣閥),這將使您的咖啡豆保質期延長。

Factors affecting coffee quality include: 🔺 Oxygen—Coffee releases carbon dioxide after roasting. If you put coffee in a ziplock bag and don't let oxygen in, the bag might burst. However, letting the bag open or allowing oxygen to continuously enter will make the taste worse. The right coffee container should have a one-way valve for releasing carbon dioxide, which will extend the shelf life of your coffee beans. 🔺 Humidity—Humidity has a negative impact on roasted coffee beans, such as changing their taste and aroma. Therefore, a proper coffee bag should be able to prevent the coffee from getting damp. 🔺 Heat—Heat causes coffee beans to lose their flavor or even develop other unpleasant odors. However, low temperatures are better for storage. The most effective temperature to maintain coffee quality is 0 degrees.

A founding member of the Specialty Coffee Association (SCA) conducted an experiment on this matter. He divided the coffee beans into three groups of samples. 👉 The first group was coffee released carbon dioxide at room temperature for five days. 👉 The second group was coffee frozen for four months. 👉 The third group was coffee frozen for one month. The beans in the second and third groups were freshly roasted and placed in ziplock bags before freezing. The coffee chosen for the experiment was from Ethiopia, mainly because it has a distinctive delicate flavor and fruity taste. These are the qualities expected to show the most significant changes in flavor after freezing. In the end, he found no difference in taste between the groups‼️
